Over the last seven months I’ve spent living on my own, I’ve realized there are innumerable little pleasures about solo habitation. Like letting a week’s worth of clothes accumulate on the floor, only to decide you’re finally ready to clean at some odd hour of the night. Or checking my iPhone while in the bathtub (don’t judge me). Or this morning’s breakfast of scrambled egg whites, a 100-calorie English muffin spread with sun-dried tomato hummus, and a healthy dash of Indonesian hot sauce from 99 Ranch Market, which looks to me like a masterpiece, but would probably leave my future family with much to be desired.
I love cooking healthy because it’s more of a challenge for me than any other style of cooking. Don’t get me wrong, I can whip up a mean, butter-soaked batch of pancakes like nobody’s business, but today, it’s all about healthy and it’s all for me. Bon appetit!
